Creamy Courgette Soup with Fennel
If you start to observe a singing bird, blooming flowers, greener grass ... definitely, spring is here and knocking on our doors. As a kind host, I'm going to welcome it home for delicious, light, and filling lunch of a warm bowl of Creamy Courgette Soup with Fennel. As a soup lover, I would say that one of the best things that work great for me in cooking, in general, is the veggie soups. I dare to say the secret of a delicious veggie dish is the right combination and suitable herbs. In today's hectic life the creamy variation of soup is the perfect choice if you want to steal some time for yourself or just spend more time with the kids instead of staying in the kitchen for hours. On the other hand, you will surprise yourself or why not your family with the specific spring taste of the courgette soup. It won't take you too long to prepare it, it's versatile and budget-friendly. Easy to make and a perfect choice for all seasons.Why you have to try a courgette soup and why exactly with fennel?The Courgette (also known as Zucchini) and called the summer squash has a specific taste when prepared as a creamy soup that cannot be compared to any other fruit. And yes, the courgettes are fruits. The combination with fennel completes perfectly the courgette flavor. Of course, if the fennel is not on your taste, its no need to add it to your soup. It still will be delicious and yummy.
The Courgette (Zucchini) is low in calories with lots of healthy benefits. It is rich in carbohydrates, fiber, protein, vitamin C, potassium and manganese. The summer squash contains also some quantities of vitamin A, vitamin E, thiamin, niacin, and pantothenic acid. Boiling reduces vitamin C in courgette by more than 50 percent but increases vitamin A. The other main hero of this incredible variation of creamy soup - the fennel. The Fennel is an aromatic herb with a licorice flavor. It is also used in personal care and alternative medicine. The herb has a lot of health benefits, mainly helps to ease anemia, indigestion, flatulence, constipation, colic, diarrhea, respiratory disorders, and menstrulal disorders. Fennel is a good source of vitamin C, vitamin B, folate, potassium, molybdenum, manganese, copper, calcium, magnesium, iron, and niacin. So in 3 steps lets do it... Cut it! Cook it ! Serve it! In this order but much quicker because the soup has to be creamy and the blender will have to do the the main job.
INGREDIENTS
4-5 servings
1.500 ml of water
1 tablespoon vegetable oil
2-3 Courgettes
1 onion, for better taste use spring onion 1
1 big potato or 3 baby potatoes, if not fresh peel it
1 small carrot
1/3 of bulb of fenel
a couple of lefted broccoli stems (optional)
1 teaspoon salt or on taste
1 tsp dried taragon
1/2 tsp white or black ground pepper
1/2 turmeric powder
1/2 ginger powder
1 tbsp cream or 1 tbsp low fat yogurt to serve (optional)
croutons to serve (optional)
METHOD
Heat the water in a large pot over medium-high heat.
Half, peel and roughly chop all veggies. Cut the courgettes into 1.5cm/ 3/5'' slices.
Add the root vegetables into the cold water and bring to boil.
When the water is boiled add into it the courgettes, fennel, broccoli stems. During the cooking process let the lid off, this will allow the water to reduce itself. Simmer for 20-25 minutes.
Add the oil and the herbs and simmer for extra 5-10 minutes.
Remove from the heat and let the soup cool slightly.
Use a blender to whizz it. Whizz it carefully until smooth and if it needs try to do it in 2-3 batches then return to the pot.
Garnish with cream or more healthy variation and as my preference with low-fat yogurt, drizzle with olive oil and finish with some homemade garlic croutons if you desire. Enjoy! :)

#WelcomeTMW Tip Keep some of the fresh fennel lieves and use to decorate when serve the soup. The Courgette and Fennel soup can be garnished with pinch of shredded parmesan. For more rich taste feel free to use creme fraiche or even mascarpone. You can keep in the fridge up to 3 days.
